For read state and folder membership on an iCloud, Gmail or Microsoft 365 account, Apple Mail is IMAP-instant and rarely wrong. Where it stops keeping up is on features that never made it to the server. Snooze in Mail lives on the device that set it, and often does not suppress the notification at the old delivery time on the other device. Mail rules on macOS run locally, and iOS Mail has no rule engine, so a filing rule you write on the Mac never runs on the phone.
